and the dark colored ox (the off ox) is Ernst.

Often oxen used in the fields have wire muzzles on to discourage any feeding. This is in part a safety feature needed when using mowing equipment or other machinery that one could get entangled in. If the muzzles are used regularly the team will stand with their heads up and not attempt to feed.
